What it pairs with

  • Tarta de Santiago (almond cake)
The almond sweetness of the Galician classic interacts with the wine's dried-fruit depth.
  • Pecorino stagionato
Aged sheep's milk with salt and crystalline texture is cut by the extreme sweetness of old PX.
  • Chocolate fondant with salted caramel
Coffee and dark fruit notes amplify the bittersweet molten chocolate centre.

History

Bodegas Tradición's Pedro Ximénez VOS is one of the rarest aged PX wines in Jerez, coming from a solera of documented 20-plus years average age. The VOS (Vinum Optimum Signatum) certification requires isotopic analysis by the Consejo Regulador. As with all Tradición wines, no effort is made to increase volume at the expense of age or quality.

  1. 1998 — Old PX solera acquired by Bodegas Tradición
  2. 2000 — Pedro Ximénez VOS certified by the Consejo Regulador
