What it pairs with
-
Morcilla ibérica (Iberian black pudding)
The wine's dark, complex depth and full body match the intensity of blood sausage. -
Aged Torta del Casar
Powerful, creamy Spanish sheep's milk cheese is well matched by very old Oloroso. -
Dark espresso chocolate truffles
The coffee-and-bitter-chocolate register of old Oloroso mirrors fine dark chocolate confections.
History
Like all wines in the Bodegas Tradición range, the Oloroso VORS is built from soleras of documented great age acquired when Tradición was founded in 1998. The house produces no young or standard commercial sherry; every wine in the portfolio is VORS or VOS certified. Production volumes are deliberately small to protect solera integrity.
- 1998 — Old Oloroso soleras acquired by Bodegas Tradición at founding
- 2000 — VORS Oloroso certified by the Consejo Regulador
