What it pairs with

  • Partridge in escabeche
The wine's full body and bitter-orange complexity pair with marinated game bird.
  • Manchego añejo with quince paste
The wine's orange-bitters note interacts beautifully with quince membrillo alongside mature sheep's cheese.
  • Grilled aged Iberian pork loin
The wine's full, dry structure supports the rich fat of top-quality pork.

History

Palo Cortado is among the most elusive of sherry styles, arising spontaneously when Fino barrels unexpectedly lose their flor. Tradición acquires old Palo Cortado soleras and maintains them at VORS level. The wine's dual-nature heritage , biological start, oxidative finish , produces an aromatics-palate contrast that no other wine style achieves.

  1. 1998 — Old Palo Cortado soleras acquired and bottled by Bodegas Tradición
  2. 2000 — VORS Palo Cortado certified by the Consejo Regulador
