Where does the San Clemente name come from?

From the abbey of San Clemente a Casauria near the estate at Bolognano, declared an Italian national monument in 1894.

How is it made?

Destemming then 15 to 20 days of fermentation in 50 hectolitre oak vats at 28 to 30 degrees, a 48 hour settling, and 18 months of ageing of which nine are in barrique.

What does it taste like?

The estate describes rose and blueberry preserve, then white pepper, cumin, liquorice and graphite, with an imposing palate, dense vital tannins and vibrant freshness.
