How to serve Mas Doix Cariñena Centenaria

Allow 95 minutes from open to pour.

  1. Open and decant. Open 90 minutes before serving and pour into a decanter to aerate.
  2. Serve at 16-18°C. Cellar temperature (16-18°C) is the band for this style. Warmer pushes alcohol forward; colder dampens aromatics.
  3. Glassware. Use a large Bordeaux-style glass: the bowl shape rewards the wine's structure.
  4. Pair with. Roast lamb with anchovies and herbs, Braised wild hare. Match the wine's structure to the dish's fat and salt.

History

The 1902 Cariñena Centenaria takes its name from the planting year of the oldest vines on the Mas Doix estate. These century-old Cariñena vines were identified by the Doix-Rovira family as worth preserving and bottling separately when they relaunched the estate in the early 2000s.

  1. 1902 — Original Cariñena vines planted on the Mas Doix estate
  2. 2002 — First separate bottling of the centenarian Cariñena vines
