Copper toned Pinot Gris from fifteen days on the skins and two years in barrel. Nutty and dried fruited, with a firm textural grip.

What it pairs with

  • Roast guinea fowl
The wine's weight and nut notes match browned white meat.
  • Aged sheep cheese
Tannin and salt balance each other and the acidity clears the fat.
  • Grilled vegetables with olive oil
Skin contact texture stands up to char where a steel white would be swamped.
