The Degani family has grown vines at Valgatara since 1900 and runs the estate as a family business, with everything from the hand harvest onward done in house.
The grapes are soft pressed with the stems removed, fermented at 24 to 27 degrees Celsius and macerated for fifteen days with three manual punch-downs a day of twenty minutes each, then decanted for malolactic fermentation and stored in stainless steel before assembly and bottling.
The estate publishes 13 percent alcohol and 5.70 grams per litre of total acidity.
The estate's own strapline dates the family as growers from 1900, and it remains a family business today.
