La Rosta is Degani's named Amarone selection, following the same route as the estate's Amarone: a hand selection of the best bunches, three to four months of drying in plateaux, January pressing and two to three years in barrique.
From the best bunches, hand-picked and dried in plateaux for three to four months, which the estate says raises sugar concentration by twenty-five to thirty percent. The grapes are pressed in January and fermented for about twenty-five to thirty days, then aged twenty-four to thirty-six months in barrique.
La Rosta is the estate's named selection, carrying the vineyard name on the label, while the other bottling is the house Amarone. Both follow the same drying and ageing regime.
