What it pairs with
-
Grilled river trout (trucha)
The wine's mineral acidity and stone fruit complement delicate freshwater fish. -
White asparagus with jamón
Saline mineral notes in the wine echo the cured ham and asparagus pairing. -
Soft sheep's milk cheese
Gentle creaminess of young Spanish sheep's milk cheese works with the wine's texture.
History
Albillo Mayor is the indigenous white grape of Ribera del Duero historically grown in mixed plantings alongside Tinto Fino. Jorge Monzon began producing a separate varietal bottling from his certified-organic old-vine parcels at La Aguilera, one of very few white wines made under the DO.
