In the glass
Aroma: fresh cherry, raspberry, herbs, earth, light cedar
Palate: red plum, dried herbs, light mineral, spice, red fruit
A fruit-forward, fresh expression of Tinto Fino from small grower parcels across the DO, with higher acidity and lighter oak influence than Flor de Pingus.
What it pairs with
-
Roast chicken
The wine's fresh acidity and lighter body work well with simple roasted poultry. -
Grilled sausages (chorizo)
Red fruit and earthy notes complement the spiced pork. -
Bean stew with vegetables
The lighter style is versatile enough for rustic Castilian legume dishes.
History
PSI is a collaborative project by Peter Sisseck with small family growers across Ribera del Duero, who farm their own old vines under guidance from the Pingus team. Launched with the 2007 vintage, it offers a more accessible introduction to the Sisseck philosophy.
