The second wine of Dominio de Pingus, produced from purchased fruit across the DO, showing similar mineral depth and concentration to Pingus but on a more accessible scale.

What it pairs with

  • Grilled lamb chops (chuletillas)
Castilian charcoal-grilled lamb pairs with the wine's fruit concentration and firm tannins.
  • Iberian pork loin
The wine's earthy mineral core complements the nutty sweetness of Iberian pork.
  • Mushroom risotto
Earthy umami from mushrooms echoes the wine's earthy, spice register.

History

First produced in 1996 from purchased old-vine Tinto Fino fruit across Ribera del Duero, Flor de Pingus was initially conceived as the second wine of the estate but has developed a significant following in its own right, sharing the biodynamic philosophy of the estate.
