The co-operative's Riserva, made since 1992 from grapes picked in the second half of October. Long skin maceration at controlled temperature in steel, malolactic in vat, then a minimum of nine months in wood. Deep, complex and persistent.

What it pairs with

  • Roast red meat
A Riserva with nine months in wood needs a substantial roast.
  • Braised beef
Liquorice and chocolate notes meet a long-braised dish.
  • Aged pecorino
The wine's persistence suits a hard mature cheese.
