Palate: dark fruit, liquorice, spice

Picked in mid-October after berry tasting and chemical analysis, with long skin maceration and full malolactic. Deep, intense ruby, sour cherry, blackberry, plum, liquorice, cocoa and violet with integrated toast, vanilla and spice, and abundant granular tannins that turn velvety in bottle.

What it pairs with

  • Roast red meat
The wine's full body and abundant tannin call for a substantial roast.
  • Game with juniper
Liquorice and cocoa depth meet strongly flavoured game.
  • Long-aged pecorino
The bright acidity keeps the wine fresh against a salty hard cheese.
