What it pairs with

  • Whole roasted Castilian lamb
Only the grandest regional dishes are a worthy match for this wine's scale and intensity.
  • Wild game with dark berry sauce
Earthy game and the wine's mineral depth create a profound pairing.
  • Aged Manchego Viejo with truffle
Concentrated cheese and truffle earthiness match the wine's mineral concentration.

History

Pesus was first produced in 1997 from the Sastre brothers' finest old-vine Tinto Fino plots at La Horra. In tiny production and released years after the harvest, it quickly attracted a cult following among Burgos-sector collectors.
