Hand harvested in September into 20 kilogram crates from vines planted between 2000 and 2006, destemmed and crushed, given a twelve hour cold maceration, then pressed, statically clarified and fermented over 22 days in stainless steel at 17C to 20C, followed by three months on fine lees with bâtonnage over the opening two.
