What it pairs with

  • Grilled octopus
A barrel-aged rosé has the texture for charred octopus.
  • Rice with rabbit
Twelve months in oak give more weight than a tank rosé, enough for a rice dish.
  • Serrano ham croquetas
Freshness and structure handle a fried, salty bite.

History

El Chuqueiro sits in the highest part of Valtuille, where clay soils hold the moisture the old vines need. Mencía, Bastardo and old Godello are pressed together and the must runs down by gravity to ferment on indigenous yeasts in 500 litre French oak barrels, where the wine then rests twelve months.
