Esporão was among the modern estates to revive Vinho de Talha, the DOC Alentejo designation for wine fermented in buried clay amphorae, a method documented since Roman times in the region.

Drink within 3-8 from vintage. Younger bottles benefit from 30-60 minutes of decanting; older ones should be poured carefully off any sediment.
Ensopado de borrego (lamb stew) and Grilled octopus are the strongest matches. Talha wine's savoury, rustic register matches Alentejo's classic stew.
