What it pairs with
-
Duck confit
The wine's full body and orange-bitter register are natural counterpoints to the richness of confit duck. -
Iberian presa (shoulder steak)
Full body and dry structure support the marbled richness of premium Iberian pork cuts. -
Hazelnuts and dried figs
Nutty aromatics and dried fruit in the wine find their mirror in the traditional Andalusian combination.
History
Palo Cortado is the rarest sherry style, arising spontaneously when a Fino barrel's flor dies unexpectedly before the wine is fortified to Oloroso levels. Equipo Navazos specifically searches for these exceptional barrels in established bodegas, buying single botas to release unfiltered as numbered La Bota de Palo Cortado editions.
- 2007 — First La Bota de Palo Cortado released by Equipo Navazos
