What it pairs with
-
Roast leg of lamb with rosemary
The Cabernet portion brings the tobacco and leather register that meets roast lamb head on. -
Beef in red wine sauce
Eighteen months in new barrique gives the wine enough frame to sit inside a reduced wine sauce. -
Aged kefalotyri
Gentle tannins and balanced acidity keep the hard sheep cheese from dominating. -
Wild mushroom risotto
The clove and herb notes echo the earthiness of the mushrooms.
How to serve Megas Oenos
Allow 60 minutes from open to pour.
- Open and decant. Give young vintages 45 to 60 minutes in a decanter so the new-barrique spice integrates with the fruit.
- Serve at 16 to 18 degrees. Cellar temperature holds the balance between the 13.5 percent alcohol and the wine's acidity.
- Choose a Bordeaux glass. The Cabernet component rewards a tall, wide-shouldered bowl that gathers the tobacco and leather notes.
- Pair with the food. Roast lamb, beef in red wine sauce or aged kefalotyri; match the wine's structure to fat and salt.
