What grape is Ichnos made from?
Ichnos is 100 percent Merlot from Palivou's own vineyards at the Kokinies and Stefani Kolokotroni sites, bottled as PGI Peloponnese.
How is Ichnos aged?
Three days of cold maceration at 8 degrees are followed by a month of skin contact with frequent pump-overs, then 12 months in new French oak barrels and six to eight months in bottle.
