Allow 65 minutes from open to pour.

  3. Glassware. Use a Burgundy bowl with a wide opening: the bowl shape rewards the wine's structure.

History

The Gonon family has farmed Saint-Joseph vines since 1963. Brothers Pierre and Jean Gonon farm old Syrah vines on the granitic schist of Mauves with biodynamic-practicing methods; production is around 30,000 bottles a year.
