Marinella Camerani founded Corte Sant'Alda in 1986 and converted to biodynamic viticulture and is listed in the Demeter Italia operator register. Mithas (from the Latin for something precious) was developed as the estate's flagship Amarone, reflecting the Mezzane valley's calcareous-volcanic terroir and Camerani's minimal-intervention philosophy.

Braised beef with wild mushroom and polenta is the canonical pairing; Truffled polenta with Monte Veronese is the other strong match. The wine's earthy mineral character and high acidity are a natural match for mushroom-braised beef.
The blend is Corvina, Rondinella, Molinara. The wine is classified as Amarone della Valpolicella DOCG.
