  • Suquet de peix Find suquet de peix on TableJourney →
Catalan saffron fish stew finds a partner in the wine's saline minerality and savoury-herb register from old-vine Xarel-lo.
  • Grilled mackerel
Xarel-lo's fennel and wild-herb aromatics partner oily fish; bright acidity cuts the richness.
  • Aged Manchego
Sheep's-milk salt sharpens the wine's lemon-zest acidity; lees-toast complements aged cheese rinds.
  • Wild mushroom rice
The savoury-herb and saline drive matches earthy mushroom dishes equally well as it does saffron rice.
