Structured Reserva from the Fuentelcesped estate: dark plum, blackcurrant and tobacco from 20 months in French oak, with earthy tannins and mineral notes reflecting the clay-limestone soils of the eastern Burgos plateau.

What it pairs with

  • Slow-roasted suckling pig
Firm tannins and concentrated dark fruit balance the rich cochinillo.
  • Beef casserole with tomatoes
The wine's earthy mineral notes merge with hearty Castilian beef stew.
  • Aged sheep's-milk cheese
Firm, food-friendly tannins pair with saline aged Manchego or Zamorano.

History

Vizcarra Ramos Reserva extends the oak regime to 20 months in French barrels, drawing from the estate's best parcels near Fuentelcesped. The eastern Burgos sub-zone's clay-limestone soils at altitude support concentrated, mineral Tinto Fino suited to the Reserva regime.
