What it pairs with

  • Cocido andaluz
The traditional chickpea and vegetable stew of Andalusia is classically accompanied by Amontillado.
  • Iberian pork (pluma ibérica) grilled
The wine's nutty complexity and medium body suit the subtle sweetness of premium Iberian pork cuts.
  • Manchego semi-curado
Medium-aged sheep's cheese is well served by the nutty, moderately complex Amontillado.

History

Antique Amontillado is one of five single-style wines in Fernando de Castilla's Antique range, each drawn from a single unblended solera in the Santiago quarter bodega. The Amontillado starts as a Fino under biological ageing, with the flor eventually dying to leave the wine under oxidative care.
