What it pairs with

  • Perdiz a la toledana (Toledo-style partridge)
Rich braised game bird pairs with the full body and oxidative depth of aged Oloroso.
  • Manchego añejo with membrillo
Aged sheep's cheese with quince paste is an Andalusian classic that Oloroso's dry richness complements.
  • Dark chocolate with sea salt
Coffee and dark-fruit notes in the wine pair with bitter-salt chocolate.

History

Like all Antique wines, this Oloroso is from a single unblended solera in the Santiago bodega, presented without cold stabilisation to show the maximum natural character of oxidatively aged Palomino Fino. The Antique range was conceived as an artisan alternative to large-house blended Olorosos.

  1. 1998 — Antique Oloroso introduced in the Fernando de Castilla Antique range
