What does Tiberio Pecorino taste like?

The estate lists lively aromas of sage, rosemary, green fig, peach and grapefruit, a fresh and balanced attack, marked minerality and an intense, enveloping finish with exotic notes.

How is the juice extracted?

After five to six hours of cold maceration at 7 to 8 degrees, the must runs off by gravity with no pressing, then ferments on indigenous yeasts in steel with no malolactic.

Why is Pecorino uncommon?

The variety sets poorly on its basal buds and yields little, so it lost ground to more productive grapes and came close to disappearing in the 1970s before being revived.
