Palate: typical Dão frame, terroir-driven savour, restrained extraction

Vines of 25 to 60 years on granite at Vila Nova de Tazem, cropped at 4.5 tonnes a hectare and barely extracted: the producer's own description is a very typical Dão reflecting its sense of place.

What it pairs with

  • Roast kid with rice
A restrained, savoury Dão red is the local table wine for cabrito.
  • Beef cheeks in red wine
Medium tannin and long finish carry a braise without adding weight.
  • Serra da Estrela cheese
The estate sits in the Serra, and the wine's acidity is built for the local ewe's cheese.
