Grapes are hand picked and whole bunch pressed at the Plumpton winery, the varieties are fermented separately in stainless steel at 12 to 15 degrees Celsius for two weeks and left on lees over winter, and a part of the blend goes into old oak before the final assembly.

Through the college's own shop. Plumpton is a teaching estate rather than a daily cellar door, so its wines and short courses are sold through the college.
