Viña de Vaca comes from 950 vines planted in 1910 on a slate slope in the paraje of the same name at Dragonte, Corullón. The grapes are partially crushed, ferment for about a month in an open foudre, macerate a further thirty days, complete a spontaneous malolactic in wood and then spend twelve months in a single 500 litre barrel. Around 666 bottles are made.
