In the glass
Aroma: dried apricot, toasted brioche, candied lemon, almond, honey
Palate: honeyed pear, fine mousse, saline mineral, biscuit
Langlois's icon Cremant de Loire. Chenin Blanc-led with Chardonnay, Pinot Noir and Cabernet Franc, fully five years on the lees: dried apricot, toasted brioche and candied lemon, with a long honeyed pear and saline mineral palate.
What it pairs with
-
Poultry with mushroom velvete
Dried apricot and biscuit lift the creamy mushroom sauce; long lees aging matches umami depth. -
Cod with walnut and Comte crust
Saline mineral length frames the cod; toasted brioche meets the walnut crust. -
Lobster with vanilla beurre blanc
Honeyed pear and almond echo the vanilla sauce; high acidity cuts the butter. -
Aged Beaufort 24 months
Nutty, crystalline hard cheese sharpens the biscuit-and-honey register.
