Fine-grained tannin frames the roast without stripping it.

History

P3 comes from the centenarian vines of La Chana de Arriba in San Román de Bembibre, a natural amphitheatre crossed by the old Via Nova Romana and facing the Virgen de la Peña sanctuary. Grapes are picked bunch by bunch, fermented in 600 litre roto-fermenters on their own natural yeast, and aged twelve months in new French oak plus thirty-six in bottle.
