Palate: concentrated dark fruit, iron and granite, firm tannins, licorice, long savoury finish
Chante-Perdrix (the singing partridge) is Delas's Cornas expression from granite terraces. One of the most accessible and reliable Cornas wines from a major negociant house.
What it pairs with
-
Partridge with lentils
The wine's name suggests the pairing; game bird and earthy lentils. -
Lamb with olives and thyme
Classic Rhone preparation; the wine's black olive notes echo the dish. -
Beef daube with mushrooms
Rich beef stew and firm tannins are a natural Northern Rhone combination.
History
Chante-Perdrix has been Delas's Cornas since 1975. The evocative name (the singing partridge) reflects the wild game-bird landscapes of the granite Cornas hillsides.
