Palate: dark cherry, dried herbs, smooth tannins, cedar finish

Polished Crianza from Tarsus at La Horra with cherry, plum and violet from 14 months in French oak; smooth, structured tannins and good length from the high-altitude Burgos-sector vineyards.

What it pairs with

  • Roast rack of lamb
Classic Ribera pairing -- cherry and violet in the wine complement the lamb's mild fat.
  • Grilled Iberico pork chop
Structured tannins and dark fruit suit the smoky, marbled pork chop.
  • Aged Manchego
Polished tannins and cherry fruit pair with the nutty aged cheese.
