VORS Amontillado from a solera begun in 1891; the extended Sanlúcar biological phase gives uncommon saline freshness to the otherwise oxidative profile.

What it pairs with

  • Roasted quail with mushrooms
Umami from both bird and fungi is elevated by the wine's hazelnut and saline depth.
  • Aged Comté or Gruyère
Nutty Swiss-style cheese mirrors the walnut oil in the Amontillado.
  • Consommé of game
Classic VORS Amontillado service with concentrated savoury stock.

History

Versos 1891 takes its name from the year the founding solera butts were laid down by the Barbadillo family. A VORS wine (Vinum Optimum Rare Signatum, average age over 30 years), the Amontillado retains the Sanlúcar saline terroir even after decades of oxidative development because the biological phase was prolonged before flor died back.

  1. 1891 — Solera foundation butts laid down at Barbadillo's Sanlúcar bodega
  2. 2010 — Versos 1891 label released commercially
