Cheese Farms in Rías Baixas, FAQ

What shape is Queso Tetilla?

A concave-convex cone with a small nipple at the tip, 9 to 15 cm tall, according to the DOP consortium; the rules set the height between the radius and the diameter of the base.

Which wine goes with Tetilla?

Galician Wikipedia says it can also be taken with a young red wine or with Albariño, after a list of simple companions. It does not call this the local pairing, so our Albariño pairing is an editorial one.

Is Tetilla made in Rías Baixas?

It is a Galician DOP, not a Rías Baixas one. The consortium lists makers in A Coruña, Lugo, Pontevedra and Ourense provinces, including Lalín and Agolada in Pontevedra.

How big is an Arzúa-Ulloa?

The register allows up to 26 cm across, 5 to 12 cm high and 0.5 to 3.5 kg. The most common size is 18 to 20 cm across and 6 to 8 cm high, according to Galician Wikipedia.

Which wine goes with Arzúa-Ulloa?

Sources differ. Galician Wikipedia names light white wines such as Ribeiro or Albariño; Spanish Wikipedia names full-bodied reds. Spanish Wikipedia adds quince paste or honey if it is eaten plain.

What is Arzúa-Ulloa de Granxa?

A version made only from the milk of the cheesemaker's own cows, with the same characteristics as the standard cheese, according to Spanish Wikipedia.

How is the curado different from the fresh Arzúa-Ulloa?

It is matured at least six months and has a compact, deep yellow paste and a buttery, salty flavour, while the standard cheese needs only six days and is soft and mild.

What does queixo da nabiza mean?

Spanish Wikipedia gives it as a traditional Galician name of the aged cheese, along with queixo do tempo dos nabos and queixo do ano.
