About Queso Tetilla

A soft, creamy cow's milk cheese sold as a rounded cone with a small nipple at the tip, which gives it its name (tetilla means small breast). The consortium rules call for a concave-convex cone 9 to 15 cm tall, with a thin straw-yellow rind under 3 mm, weighing 0.5 to 1.5 kg. It has had a Denominación de Origen since 1993 and European protection since 1996. It is a Galician cheese rather than a Rías Baixas one; its Pontevedra makers sit inland in the Deza country around Lalín and Agolada.

Made in: Galicia; traditionally the east of A Coruña province around Curtis, Arzúa and Melide, with makers today in A Coruña, Lugo, Pontevedra and Ourense provinces

On the plate

Natural, milky, slightly acidic and mildly salty, with a soft, creamy, uniform paste, according to the consortium, which presents it as an everyday cheese suited to many palates.

What to pour with Queso Tetilla

Dry Albariño (Val do Salnés or Condado) Rías Baixas

Our pick

Tetilla is milky, creamy and mildly salty. Young dry Albariño, unoaked and raised on its lees in steel, brings high acidity that lifts the milk fat without covering the soft paste, and its fresh fruit suits a cheese sold young.

Light Atlantic red (Caíño Tinto) Rías Baixas

Our pick

Caíño Tinto is a high-acid Atlantic red, medium in body and tannin, so it stays light enough for Tetilla's mild, creamy paste while its acidity cuts the milk fat and its fruit sits beside the cheese's slight tang.

Queso Tetilla: questions

What shape is Queso Tetilla?

A concave-convex cone with a small nipple at the tip, 9 to 15 cm tall, according to the DOP consortium; the rules set the height between the radius and the diameter of the base.

Which wine goes with Tetilla?

Galician Wikipedia says it can also be taken with a young red wine or with Albariño, after a list of simple companions. It does not call this the local pairing, so our Albariño pairing is an editorial one.

Is Tetilla made in Rías Baixas?

It is a Galician DOP, not a Rías Baixas one. The consortium lists makers in A Coruña, Lugo, Pontevedra and Ourense provinces, including Lalín and Agolada in Pontevedra.
