What it pairs with

  • Braised rabbit with herbs
The dry oxidative complexity matches white-meat game; the herbal notes in the wine complement the aromatics.
  • Jamón ibérico cortado a cuchillo
The extreme complexity of very old Amontillado is a peer to hand-sliced acorn-fed Iberian ham.
  • Aged Manchego or Zamorano
Old hard sheep's milk cheese with the complexity to match a VORS Amontillado.

History

NPU is an abbreviation of 'Nippur', an ancient city of Mesopotamia that inspired the house's premium label. The Amontillado VORS solera at Sánchez Romate was established in the early 20th century and is one of the oldest active Amontillado soleras in Jerez. VORS certification confirms minimum 30 years average age through isotopic analysis.

  1. 1922 — NPU Amontillado VORS solera established at Sánchez Romate
  2. 2000 — VORS certification conferred by the Consejo Regulador
