History

L'Origen reflects the origins of Cava as a Macabeu-Xarel-lo co-fermentation, as practised in the first generation of Cava production. Pere Mata Capdevila founded Mata i Coloma in 2000 after consulting for larger Cava producers and farms 5 hectares organically on the outskirts of Sant Sadurni.
