Palate: yellow stone fruit, almond cream, lemon pith, saline minerality

The Riserva tier of Edi Keber's sole Collio Bianco, with three years on lees in Slavonian oak. Yellow apple, almond cream and wax over a long saline finish.

What it pairs with

  • Risotto al tartufo bianco
Almond cream and honey aromatics handle the white truffle's musky depth; full body holds the Carnaroli starch.
  • Lobster Thermidor
Almond cream pairs with the gratin's bechamel; saline minerality lifts the shellfish sweetness.
  • Aged Parmigiano Reggiano 36 months
Crystalline cheese salt mirrors the saline minerality; almond aromatics echo the rind's umami.

History

Released first with the 2014 vintage, the Riserva is the extended-ageing tier of Edi Keber's sole Collio Bianco. The DOC Collio added the Riserva category in the disciplinare update of the early 2020s; Keber was among the early adopters.

Frequently asked about Edi Keber Collio Bianco Riserva

What does Edi Keber Collio Bianco Riserva taste like?

Yellow apple, almond blossom, honey, hay and wax on the nose; yellow stone fruit, almond cream, lemon pith and saline minerality on the palate. Full-bodied with high acidity and a long finish from 36 months on lees.

How does the Riserva differ from the base Collio Bianco?

Same blend (Friulano + Ribolla + Malvasia), but the Riserva spends 36 months on lees in Slavonian oak before bottling versus 18 months for the base. The Riserva carries more weight and longer cellar potential.

When should I drink the Riserva?

Drink between 3 and 18 years from vintage. The wine cellars exceptionally well; almond cream and wax aromatics deepen from year 5 onwards.
