In the glass
Aroma: hazelnut, dried fig, walnut, mineral, light coffee
Palate: caramel, rancio, dried orange, savoury mineral
Organic Palo Cortado: the rarest sherry style from a certified organic producer; hazelnut aromatics over a full, oxidative body with the characteristic tension of the intermediate classification.
What it pairs with
-
Organic lamb with rosemary
Organic-farmed lamb with herbed roasting echoes the wine's earthy mineral and dried-herb character. -
Hard aged cheese with quince paste
Palo Cortado's Amontillado-Oloroso duality bridges the cheese's saltiness and the sweet quince.
