Organic Palo Cortado: the rarest sherry style from a certified organic producer; hazelnut aromatics over a full, oxidative body with the characteristic tension of the intermediate classification.

What it pairs with

  • Organic lamb with rosemary
Organic-farmed lamb with herbed roasting echoes the wine's earthy mineral and dried-herb character.
  • Hard aged cheese with quince paste
Palo Cortado's Amontillado-Oloroso duality bridges the cheese's saltiness and the sweet quince.

History

Bodegas Robles is a certified organic producer in the Montilla region near Córdoba who also holds DO Jerez-Xérès-Sherry certification for their Palo Cortado and PX wines. The organic certification distinguishes them as one of the few sherry-category producers with formal organic accreditation. Their Palo Cortado arises from natural flor die-back in the organic solera.

  1. 1927 — Bodegas Robles founded in Montilla with organic farming principles
  2. 2000 — DO Jerez-Xérès-Sherry certification obtained; organic Palo Cortado released
