About Mató

A fresh, unsalted Catalan cheese made from whole milk heated much harder than for other cheeses, so the whey proteins set in the curd: ACREFA says above 85 degrees C, Catalan Wikipedia 80 to 95 degrees for one to three minutes. ACREFA says it was historically goat's milk and is now replaced by cow's. The name appears in the medieval Sent Soví cookbook, and mató with honey is a classic Catalan dessert. Its heartland is central Catalonia; in the Priorat, the Pizarro family has made mató at its dairy in Cornudella de Montsant since 1996, according to the comarca's tourist board.

Made in: Traditionally central Catalonia: an arc of about 100 km around Barcelona taking in Bages, Osona, the south of Berguedà and the upper parts of the Penedès, Anoia and Vallès, according to ACREFA. In the Priorat it is made at Cornudella de Montsant, according to the comarca's tourist board

On the plate

Catalan Wikipedia describes a milky, mild, moist taste with a short finish and a granular or gelled texture. ACREFA calls the colour clearly white, with no special smell, a delicate moist taste recalling milk, and a soft, light texture.

What to pour with Mató

Naturally sweet Garnacha, DO Montsant Priorat

Our pick

ACREFA says mató is usually eaten with honey, jam, nuts or a sweet liqueur. A sweet late-harvest Garnacha from Falset with dried-fruit richness stands in for the honey: the cheese stays milky, the wine brings the sweetness.

Muscat ancestral sparkling, off-dry Penedes

Our pick

Mató is unsalted, milky and mild, and is eaten as a dessert with honey. This Muscat ancestral sparkling is off-dry at 6.5% alcohol, with white peach, lychee and a soft bubble, so it plays the part of the honey without overwhelming the curd.

Vi ranci, oxidatively aged Garnacha, DOQ Priorat Priorat

Our pick

ACREFA lists a sweet liqueur or spirit among mató's usual partners. An off-dry Garnacha vi ranci, aged oxidatively in small oak casks, brings a nutty rancio note and a touch of sweetness to the cheese's plain milk.

Semi-dry Cava Penedes

Our pick

Unsalted mató invites sweetness, as in honey or jam. This semi-dry Cava has about 37 g/l residual sugar, with ripe pear, quince and a creamy mousse, so it supplies that sweetness while the bubbles lift the soft, granular curd.

Dry steel-fermented Garnacha Blanca and Macabeo white, DOQ Priorat Priorat

Our pick

ACREFA describes mató as clearly white, with a delicate taste recalling milk. These dry whites are fermented in steel with little or no oak and carry high or medium acidity, so they freshen the cheese without covering it.

Fresh unoaked Garnacha Blanca and Macabeo white, DO Montsant Priorat

Our pick

ACREFA describes mató as clearly white, with a delicate taste recalling milk. These light, dry Montsant whites are fermented in steel without oak and have high acidity, a clean lift for a fresh, unsalted cheese.
