Frequently asked about The Trouble With Dreams

What is The Trouble With Dreams?

It is Sugrue South Downs' flagship single-vintage sparkling wine. Dermot Sugrue planted his first vineyard at Storrington Priory in 2006, setting out to make single-vintage sparkling wine on South Downs chalk in the style of the grower Champagnes of the Cote des Blancs.

How is The Trouble With Dreams made?

Base wines see younger French oak barriques alongside older, larger demi-muids. In ripe vintages such as 2022 malolactic fermentation is avoided entirely, and the wine is disgorged with a low dosage of 6 grams per litre.

Which grape leads the blend?

Chardonnay. Sugrue describes its single-vintage sparkling cuvees as Chardonnay-led; the exact blend proportions are not published.
