Pur Sang, established 1988, sits at the heart of Dagueneau's range. Citrus, saline mineral and flint smoke from a Kimmeridgian-clay terroir.

What it pairs with

  • Sole meunière
Brown butter meets the wine's creamy lees and chalky lift; flint signature echoes the browning.
  • Roast turbot
Firm-fleshed fish meets full body and saline mineral; lees creaminess handles butter sauce.
  • Coquilles Saint-Jacques
Scallop sweetness and saline mineral lift; chalk handles the citrus garnish.
  • Goat cheese soufflé
Chèvre intensity finds the wine's chalky drive; the soufflé's weight handles full body.

History

Pur Sang was established in 1988 as Dagueneau's most complete expression of the estate's holdings. The cuvée sits between the more austere Silex and the broader Buisson Renard.

Frequently asked about Pouilly-Fumé Pur Sang

What does Dagueneau Pur Sang taste like?

Lemon zest, white flower, smoke and stone fruit on the nose; citrus, saline mineral, lees creaminess and wet flint on the palate. Full-bodied with high acidity and a long, smoky finish.

When should I drink Dagueneau Pur Sang?

Drink between 5 and 20 years from vintage. The cigar-barrel ageing and tank rest give the wine remarkable cellaring capacity.

What is the difference between Pur Sang and Silex?

Silex draws on flint-only terroir for the most overtly smoky cuvée; Pur Sang is a broader Kimmeridgian-clay expression with more breadth and creamy lees.

Is Dagueneau Pur Sang vegan?

Yes. The estate is biodynamic and uses no animal-derived fining agents.
