In the glass
Aroma: citrus zest, white flowers, white peach, wet stone
Palate: lemon, grapefruit, saline minerality, green almond
Biodynamic blend across Vacheron's 48 hectares on Oxfordian limestone and silex. Pure Sauvignon Blanc with crystalline citrus, saline drive and a chalky finish.
What it pairs with
-
Crottin de Chavignol
The classic Sancerre and the AOC's own goat cheese share a chalky, lactic-saline register that locks together. -
Plateau de fruits de mer
High acidity and saline minerality cut through oyster brine and pick up langoustine sweetness. -
Asparagus with hollandaise
Sauvignon's grassy edge bridges the vegetable's bitterness; lemon-zest finish lifts the egg-yolk richness. -
Sole meunière
Buttery white fish meets racy acidity and the wine's faint nuttiness from lees ageing.
History
Vacheron's domaine bottling has been the family's Sancerre Blanc reference since the postwar generation took over. Biodynamic conversion from 2004 brought greater precision and texture across the cuvée.
- 2004 — Estate converted to organic and biodynamic farming under Ecocert
- 2008 — Wines certified biodynamic, fully reflecting the conversion across the 48 hectares

Frequently asked about Sancerre Blanc
What does Vacheron Sancerre Blanc taste like?
Citrus zest, white flowers, white peach and wet stone on the nose; lemon, grapefruit, saline minerality and green almond on the palate. Medium-bodied with high acidity and a long chalky finish.
When should I drink Vacheron Sancerre Blanc?
Drink between 1 and 8 years from vintage. The biodynamic farming gives the wine more textural depth than a typical Sancerre, so even young vintages reward a brief 15 minute decant.
Is Vacheron Sancerre Blanc vegan?
Yes. The estate has used no animal-derived fining agents since converting to biodynamic farming in 2004, though Vacheron does not pursue formal vegan certification.
What food pairs with Vacheron Sancerre Blanc?
Crottin de Chavignol goat cheese is the canonical pairing; the wine and the AOC's own cheese lock together. Oysters and other shellfish, asparagus with hollandaise, and sole meunière are equally strong matches.
