Arzúa's cheese fair, a Festa de Interese Turístico de Galicia built around Arzúa-Ulloa, with a producers' fair, workshops, a tapas contest and concerts. Arzúa is in A Coruña province, outside the Rías Baixas wine area, in Arzúa-Ulloa's home country.
Tetilla is milky, creamy and mildly salty. Young dry Albariño, unoaked and raised on its lees in steel, brings high acidity that lifts the milk fat without covering the soft paste, and its fresh fruit suits a cheese sold young.
Fresh Arzúa-Ulloa is lactic, slightly acid and lightly salted, with butter and yogurt notes. The high acidity of young, unoaked Albariño echoes that lactic edge and keeps the soft, buttery paste from feeling heavy.
The aged cheese is salty and mostly buttery, with light vanilla and nut notes in a compact paste. Albariño left two years or more on its lees gains honeyed citrus, full body and a long saline finish, enough weight to stand beside it.

Fair devoted to requeixo and honey in As Neves, in the Condado do Tea subzone inside the Rías Baixas wine area. It has run since 1991 and was declared a Festa de Interese Turístico de Galicia in 2013; the Condado-Paradanta cooperative organises it.
A visit to the Anzuxao dairy beside a pazo in the Deza, inland in Pontevedra province and outside the Rías Baixas wine area: a walk round the grounds, an audiovisual on cheesemaking and a tasting of Galician cheeses, with a view of production through a glass wall when the visit coincides with cheesemaking.
