A semi-hard cow's milk cheese from Pustertal, from the milk of South Tyrolean mountain farms.
Pustertaler is the cut cheese Mila has sold since 1974, which the cooperative calls a Urgestein, a bedrock of its range. The Italian PAT register lists it as Schnittkäse Pustertaler. The rind is dark yellow to slightly reddish and can be eaten; the paste is yellowish-white with pea-sized holes. Mila's nutrition table gives 30 g fat and 24 g protein per 100 g, and it describes the cheese as naturally lactose free, under 0.1 g per 100 g.

Mila describes a supple, elegant consistency and a pleasantly mild-aromatic taste. It serves the cheese with speck or apples.
Wine and cheese
Mila serves Pustertaler with speck or apples and calls it mild-aromatic. A medium-bodied Valle Isarco Grüner Veltliner with a spicy, herbal edge and high acidity keeps the supple paste fresh without covering it.
