Palate: raspberry, smoky depth, structure, long finish

A structured Pinot-led rose built on the Special Cuvee base with red wine from Ay's Cote aux Enfants: raspberry and spice over smoky, savoury depth.

What it pairs with

  • Charcuterie Find charcuterie on TableJourney →
Red fruit and spice frame cured meats.
  • Seared duck
Smoky depth and structure meet the duck's fat.
  • Salmon en croute
Raspberry lift balances the oily fish.

History

Bollinger launched its rose only in 2008, late by big-house standards, building it on the Special Cuvee blend with red wine from the historic Cote aux Enfants vineyard in Ay.
