What it pairs with

History

La Demoiselle is a 1.2 hectare plot of flinty clay right on the Sancerre peak. The stone is compacted into a dense layer of sharp flints, a soil unfamiliar to Pinot Noir that the estate says gives the wine great originality. About 3,000 bottles are made. The estate trains its vineyard in organic and biodynamic viticulture, and Biodyvin lists Domaine Alphonse Mellot as a member since 2006 with the Biodyvin label.
