Christian and Veronika Kerschbaumer have farmed Garlider's 4 hectares in Feldthurns organically since 1999 and have been formally certified since 2009. Gruener Veltliner is the estate's signature - critic Stuart Pigott named Christian an ascending Eisacktal star. Also rare upper-Eisacktal Pinot Nero.
Tip: Tastings by appointment. The Gruener Veltliner Doppelmagnum bottlings are the large-format signature.

Werner Morandell's Lieselehof has farmed organically since 1993, an Alto Adige organic-viticulture pioneer. Around 6 hectares from 250 m on Lake Caldaro to 1,250 m in the Dolomites. Fungus-resistant variety specialist (Solaris, Bronner, Souvignier Gris); the Solaris-based Vino del Passo is a singular Italian dessert wine.
Tip: Visit includes the on-site South Tyrolean Vine Museum trail. The Vino del Passo Solaris is the cellar's standout pour.

Martin Gojer's Pranzegg has farmed biodynamically since 2009, with organic certification and a natural wine cellar approach: spontaneous fermentation, no fining or filtration, minimal sulfur (only at bottling), long lees-ageing of 2-3 years before release. 3.5 hectares west of Bolzano on porphyry-and-basalt at 400 m. The Sankt Magdalener, Tonsur and Caroline cuvees are South Tyrolean natural wine references.
Tip: Visits by appointment only - the cellar is small. Bottle access through Tannico, Newcomer Wines, Wine Bohemians.

Tenuta Manincor's respekt-BIODYN biodynamic production operates under the Demeter standard which goes beyond EU organic by prohibiting gelatine and isinglass animal-derived fining agents. The full Manincor range (Reserve della Contessa, Mason Pinot Nero, Cassiano blend) is therefore vegan-compatible at the cellar standard level, although individual cuvees are not separately marked as vegan-certified.
Tip: Ask the cellar team to confirm vegan status per cuvee, since cellar practice (not just Demeter standard) determines the final fining choice. The Reserve della Contessa Pinot Bianco is the headline pour and is vegan-compatible.

Martin Gojer's Pranzegg natural-wine cellar adds minimal sulphur only at bottling (no protection during fermentation or maturation), with long lees-ageing of 2-3 years giving natural microbial stability. The cellar approach produces South Tyrol's low-sulfite reference wines, with total SO2 typically well below organic-wine norms.
Tip: The Tonsur (white blend) and the Sankt Magdalener red are the cellar's low-sulfite expressions. Drink within 3-5 years of release for the freshest expression.
